Our company has focused on native cultivars of Salento, ‘Ogliarola Salentina’ and ‘Cellina di Nardò’, together with other Italian varieties that, here in Salento, however, have found their second home, such as ‘Leccino’ and ‘Frantoio’.
The oil is no longer just ‘oil’ and is no longer just one, but as many as are the varieties of olives grown in Italy (over 700): each extra virgin olive oil can be matched to a dish, some vegetable, meat, fish, according to very simple rules of combination: a delicate oil can be easily combined with simple dishes, while an oil with a stong character will masterfully bring out more complex flavors and dishes.

The wheat germ is the heart of the grain of wheat, rich in flavor and active principles nutrients. Normally during the grinding of the grain the germ is removed to facilitate the retention of the flours.
After years of use of the wheat germ is obtained which is a paste with an extraordinary and unmistakable taste. During cooking it unleashes an intense aroma of wheat and the water is tinged slightly green just because of the presence of wheat germ fresh. …is different …is good also seasoned with a single thread of oil.

It’s the sauce more simple of the peasant tradition ligure, made with simple ingredients (tomato, garlic and oil) but really required for the simplicity and authenticity. Thanks to its characteristic it has a great versatility with pasta dishes, better if in a particular shapes as our lilies or mandilli, able to capture and retain the sauce. TOUCH AT ROSEMARY
A tomato sauce makes it easy and at the same time very tasty thanks to fragrant rosemary and a pinch of garlic, for those who loves the pasta and the traditional flavors, and is ideal for quick pasta dishes, it is in fact bake it, just heat it on a slow fire for a few minutes, with the addition of a dash of olive oil. To enjoy, as an alternative, as a condiment of the brown rice and a dusting of parmesan cheese or as a basis for meatballs.
