Black Taggiasche Olives in Bag

The “Taggiasche” black olives in bag are a classic of the Ligurian tradition as Sommariva’s Family teaches. The unique taste of black olives makes these olives an inevitable food in any kitchen. Olives, salt, water – simple ingredients that add to every dish the tasty detail that will make it unique. The Taggiasca olive is a cultivar of olive trees, typical especially of the western Liguria and in particular of the whole Province of west Imperia. In the Province of Savona it is typically grown only in the Andorese Val Merula, in the Alassino and in the Val Lerrone ingauna.

Plant that can reach even large dimensions (15m high), with big branches well open and pendulous posture. With good vigor; rhizogenic capacity not excellent. The little fingers are medium, both in length and in number of flowers, and have a low ovarian abortion.
To harvest the olives of the Taggiasca variety, large dense mesh nets are currently spread under the trees; the mats are positioned in periods prior to the actual harvest, in order to allow the recovery of the fruits, which fall prematurely in a natural way. The traditional method of harvesting practiced in the Imperia, however, provided that the olives fallen before the beating were picked by hand and that those still on the tree were dropped, with trappe, on sheets and then collected manually. Traditionally, the task of beating was the task of men, while that of picking them up on the ground was for women.
